    LAB - Labs bring together small groups for an exclusive, first-hand look into what happens behind the scenes at some of the most innovative companies, community leaders and institutions around Chicago.

    The Artisan Grain Collaborative is a group of bakers, farmers, millers, nutritionists, and other experts who are working to promote a regenerative food system by strengthening the market for local grains across the Midwest. In this Lab, learn more about artisan grains and get hands-on experience on how to use them in baking projects. First, hear from Erin Meyer of Basil’s Harvest about how the importance of artisan grains and how they differ from conventional grains. Then, participate in a baking lesson with Rachel Bernier-Green of Laine’s Bake Shop, who will show you how to make a fall-themed Mexican Hot Chocolate Rye Brownie. Finally, enjoy an expert bread-baking demonstration StarChefs’ “Rising Star Baker” Alexander Roman of Somerset.

    Wear clothes you don't mind getting dirty, closed toe shoes required. Must be 21 or older and provide valid ID.
