    LAB - Labs bring together small groups for an exclusive, first-hand look into what happens behind the scenes at some of the most innovative companies, community leaders and institutions around Chicago.

    If you’ve ever eaten at Wicker Park’s Frontier, you’re probably aware that the restaurant is known for roasting and serving entire animals. Since opening, the restaurant has been a haven for carnivores and foodies alike. At this Lab, Chef Brian Jupiter will demonstrate the full process of breaking down an animal from start to finish. He’ll discuss the past, present and future of Frontier, and provide an intimate look into how an animal makes it to your plate. Get ready to rip down the veil that exists between what you eat and where it comes from.
