    Labs bring together small groups for an exclusive, first-hand look into what happens behind the scenes at some of the most innovative companies, community leaders and institutions around Chicago.

    Tenderloin, sirloin, ribs and chops: Where do different cuts of meat come from? The Chopping Block's Chef Mario Scordato butchers a whole pig, showing you where different cuts are located while explaining the best techniques to cook them. Participants will work together in teams to cook and enjoy a pork-filled lunch.
