    Josh Schonwald


    Josh Schonwald is perhaps best known as the Neil Armstrong of lab-grown meat. On August 5 in London, Schonwald took a bite of the world’s first in vitro hamburger; a 5 ounce piece of meat grown from cow stem cells in a Dutch lab at the cost of $330,000. A Chicago-based writer, Schonwald developed his interest in disembodied meat — as well as transgenic vegetables, indoor fish farming, and sub-Saharan African foods — while researching his book, The Taste of Tomorrow: Dispatches from the Future of Food, which seeks to give readers a sneak peek at the foods of 2035.
